What is real champagne?

Real champagne is sparkling wine that comes exclusively from the Champagne region in France. Many people mistakenly believe that all wines with bubbles are called champagne. However, this is a common misconception, as sparkling wine is the general term for bubbly wines.

Different countries have their own versions of sparkling wine: Spain has Cava, and Italy has Prosecco. At Wine Guys, we offer authentic French champagne as well as delightful sparkling wines like Méthode Cap Classique (MCC) from South Africa, featuring fine bubbles and a fresh, acidic taste.

What’s the difference between MCC, Cava, and Champagne?

Origin

The primary difference lies in the region where the wine is produced:

  • Champagne refers strictly to sparkling wine from the Champagne region of France that meets specific requirements to use the name. Sparkling wines from other parts of France are often called Crémant.
  • Cava comes from Catalonia in Spain and was developed in the late 1800s to compete with French champagne.
  • MCC is made in South Africa’s Cape region, where winemaking dates back to the 1600s.

Flavor

Champagne, Cava, and MCC have distinct flavor profiles. MCC and Cava are often rounder and softer in taste, while Champagne is more acidic with a notable minerality derived from the chalky soil in the Champagne region.

Price

You can often find a budget-friendly yet delicious champagne for around €29–€39, while a high-quality MCC or Cava is typically priced around €20. The higher cost of champagne is partly due to its branding as a luxury product.

The right champagne for your taste

Champagne comes in a range of sweetness levels. Here’s a quick guide to help you choose:

  • Brut Nature – Very dry (0–3g sugar/L)
  • Extra Brut – Dry (0–6g sugar/L)
  • Brut – Dry with a hint of sweetness (0–12g sugar/L)
  • Extra Sec – Noticeably sweet (12–17g sugar/L)
  • Sec – Sweet but not dessert-like (17–32g sugar/L)
  • Demi-Sec – Sweet, great with dessert (32–50g sugar/L)
  • Doux – Very sweet, a dessert in itself! (50+g sugar/L)

How is Champagne made?

Champagne is made using the traditional method, also known as Méthode Champenoise. This involves a second fermentation in the bottle, where a mixture of yeast and sugar is added to create the fine bubbles. The wine is then aged for several years to develop complexity and depth.

Which grapes are used in Champagne?

The three main grape varieties used to make Champagne are:

  • Pinot Noir – Adds structure and body.
  • Chardonnay – Brings freshness and elegance.
  • Pinot Meunier – Provides softness and fruitiness.

Champagne and food

Champagne is an incredibly versatile drink that pairs wonderfully with seafood, chicken, and cheese. It’s also delightful on its own and perfect for sipping and savoring. For traditional desserts like almond cakes, a Demi-Sec Champagne is an ideal choice, balancing sweetness and acidity.

Non-Vintage and Vintage Champagne

Champagne can be either:

  • Non-Vintage – A blend of grapes from multiple years.
  • Vintage – Made from grapes harvested in a single exceptional year. Vintage champagne is often of higher quality and more expensive.

Dom Pérignon – The Father of Champagne

One of the most iconic figures in Champagne’s history is Dom Pérignon, a Benedictine monk who lived at the Abbey of Hautvillers in the 17th century. While he didn’t invent champagne, he significantly contributed to its development and popularity, experimenting with winemaking techniques, including the crucial second fermentation.
